Short description of your business:
Preservation Kitchen features seasonal Northwest cuisine with a menu that changes based on what our Chef Michael Lopata can get locally and fresh from our Washington growers. We serve dinner Tuesday through Sunday from 4:30 pm to 10:00 pm and our Happy Hour is from 4:00 pm to 6:00 pm daily. We also have a late Happy Hour Tuesday through Thursday after 8:00 pm. We serve breakfast and lunch Saturday and Sunday from 9:00 am until 2:00 pm. Our restaurant has a charm and elegance that makes us perfect for your special occasions, as well as a comfortable, cozy feel that makes us ideal for a casual dinner with friends or family. Preservation Kitchen is truly special enough for any occasion but priced for everyday.

Who is your ideal customer?
Our ideal customer is anyone who is looking for excellent food and a truly memorable dining experience. Our customers range from those who are coming in to our bar for a drink and appetizers with friends, joining us for a Tuesday night wine tasting, groups of friends and family wanting to celebrate over a beautiful meal, or someone wanting a five course candlelight dinner by the fireplace.
What is unique about your business that you feel distinguishes you among others offering similar products or services?
Organic produce, sustainably-raised meats and wild fish are used whenever possible and all of our pastas and desserts are home-made.
Tell us something that would surprise people about your business:
The beautiful house Preservation Kitchen is in was built in 1916 and was home to Bothell’s first Mayor.

I have two brothers, one older and one younger, that I am very close with. My brother Austin is 24 and a chef in Portland, OR and Kyle is 21 and a junior at The University of Puget Sound in Tacoma.
Personal interests or hobbies:
I love running and exercising, as well as singing, performing in musical theatre and reading.

Move to Florence and open a bakery

Most exciting trip you’ve ever taken:
I spent a semester in France where I traveled to over twenty cities and also spent a week in Italy where I went to Rome, Florence and Lake Como.

I have played Liesl in The Sound of Music, Lois in Kiss Me, Kate! And Belle in Beauty and the Beast. |
